Olivewood Ranch Zucchini Banana Nut Bread
Instructions
Makes 2 loaves
4 eggs
1 1/4 C. brown sugar
1/2 C. Honey
2/3 C. Olivewood Ranch Kumquat Mandarin co milled oil
2/3 C. Fresh squeezed mandarin juice
2C. Shredded unpeeled zucchini
3 1/2 C. All purpose flour
1 1/2 tsp. Baking soda
1 1/2 tsp. Baking powder
1 tsp. Salt
2 tbls. Finely grated mandarin peel
1 mashed banana
3/4 C. Chopped walnuts, optional
Heat oven to 350 degrees. Grease and flour ( with olive oil) and flour bottoms only of 2, 9X5 inch loaf pans. In a large bowl, beat eggs u til thick and light in color. Gradually beat in sugar and honey. Stir in oil,mandarin juice,and shredded zucchini. Add the remaining ingredients and mix well. Pour batter into greased pans.
Bake at 350 degrees for 50-55 minutes or until a toothpick stuck in the middle comes out clean. Cool completely and wrap tightly in plastic wrap and stirs in the refrigerator.
